Carbon dating is a very specific process: it is used to determine the age of dead plants and animals, and is based on the assumption that the amount of carbon-14, a radioactive isotope of carbon, in the Earth's atmosphere has remained more or less constant over time.
The ages of the various layers in the geological column were assigned dates using relative age dating techniques that compared current environmental rates of accumulation to the quantities of sediment that cover the earth.
Clearly it was something other than man made emissions which caused the global warming that ended that ice age, but in any case 97% of the earth's heat trapping greenhouse effect is caused by water vapour in the atmosphere, not carbon dioxide.
